On a recent Monday,

Jose took me grocery shopping while Daisy was at a meeting.

I said I’d help get supplies for dinner

if he would teach me how to make some

“traditional Puerto Rican” food!!!

Here’s how to make Jose’s Sancocho!!!

Bring a large pot of salted water to a boil.

Add:

Pimento pepper

Yautia

Papa

(and batata/sweet potato)

  ñame

guineo (banana)

and Salsa verde.

(Not pictured but also added:

cebolla, aho, cerdo, and calabaza/

onion, garlic, pork, and pumpkin)

Combine all ingredients and let stew for at least 15 minutes, or as long as desired!!!

Serve and enjoy the company of your companions

…and then make a tuber hash with your leftover root veggies!!!
